Provide for all cold potentially hazardous foods to be held at 41°F or below at all times except during necessary periods of preparation. (750.120) Food had been on salad bar for 10 minutes, so it was put in freezer to rapidly cool. Immediate/Onsite
*12  Observed the following improper hand washing practices: 1. employee wiped mouth with back of their hand and then went and handled pans before washing hands.
